Because you see, if it were just an age spell, all of the cells within the seed would simply age, and possibly die without having done anything at all.
No, what would be needed would have to be a time/acceleration spell to increase the speed of all activity within the seed (which still wouldn't work unless you channeled enough nutrients and water to the seed as it expanded and multiplied at a much higher rate and as it grew its needs would become even greater for more nutrients while still coping with the speeded growth!)
I dunno if I'd call it elementalism though >
